Barbecue Salmon Tortellas,
with arugula, cream cheese and a mango relish.
Chicken Bombay, lightly curried chicken, skewered with apple, served 
with our house chutney.
Vegetarian Spring Roll with cilantro & chili peppers.
Spinach Tortilla wrap with chillied red bean and peppers.
Pecan Cappuccino Squares & fresh fruit tartlets.

Hot hors d'oeuvres
Butler Service
Crispy Canneloni,
with sausage, cheeses and salsa.
Seafood Croquetas, with a cumin dip.

Room Temperature & Cold hors d'oeuvres

Cheeses & Fresh Fruit
, to include Brie, smoked Gouda, Swiss, herbed Havarti,
Cheddars and a display of seasonal fresh fruit with crackers.
Fresh basil & tomato bruschetta served with garlic toast.
Mini Crostini Pizzas, Tarragon Chicken, Spinach & Feta cheese
Ham & Pineapple, Italian Salami and sun dried tomato
Hummous with mini pitas and carrot sticks for dipping.
Barbecue salmon Nori roll, a Japanese wrap with smoked salmon, rice & spring onion,served with wasabi and pickled ginger.

Hot hors d'oeuvres
Presented for Self Service
Gingered Pork WonTons
with a Thai style dipping sauce.
Beef Polynesian meatballs, sweet & sour.

Feature Station
ESCARGOT & PRAWNS
One of our chefs mans this fresh saute station
.
Escargot are sauteed with tender mushroom caps in butter, garlic and herbs,
Prawns are sauteed in butter & garlic

THE BAR SERVICES
A total of three bars to tend to After Eight's 450 Guests.
Two full service bars;  one featuring a cappuccino service and one
featuring our blender cocktail service (daquiris!).  The third or
satellite bar featured wine and beer service only.
