This ABajan@ seasoning (green onion, jalapenos, scotch bonnets, thyme,

parsley, garlic and lime) is marinated with lean pork skewers and

served Achopped@ as a garnish.

Jerk Chicken Skewers, Boneless breast of chicken is

marinated in Ajerk@ spices.

Fresh from the pan,

Swordfish bites, served with fresh lime.

 

Presented with the feature stations

Fresh Fruit,  Papaya, Pineapple, Orange, Banana and Melon

skewers with honeyed yoghurt dip.

Sweet Potato Chips

Roti with curried potato filling.

Beef Carving Station

PEPITOS, a Spanish style steak sandwich will be carved to order for your guests.

Roast Baron of Beef is peppered and carved onto a fresh cocktail roll

and served with condiments of sliced red onion, gherkins and

our special mustard mayonnaise spread.

 

Feature Tapas Station

Grilled Chorizo Sausage, Spanish style sausage is sauteed.

Fried Cheese, Mozzarella rolled in parmesan cheese & prepared fresh.

Tasty Chicken Croquettas.

Guacomole and Salsa sauces served with fresh tortilla chips.

Assorted Tortilla wraps, with chillied bean dip and peppers,

Smoked Salmon & cream cheese Tortellas with mango relish & Arugula &

Cajun Breast of Chicken with mango in a flour Tortilla.

Provence Chicken Crepes, tender boneless breast of chicken &

peppers in a paprika sauce.

Oysters & Sausage, A Bordeaux favourite, fresh shucked oysters and

slices of garlic sausage served with sliced baguettes.
