THE
FOOD
The food
was presented in a number of different ways for this grand opening
event.
Two feature stations with our professional kitchen staff carving a tasty
beef tenderloin and at another station serving up a tasty seafood
fondue. A variety of self service tables for the guests to enjoy
as well as the service staff passing or "butlering" another
variety of hors d'oeuvres.

HORS D'OEUVRES
For self service,

Presented COLD
Chilled Prawns,
are marinated in chilies and wrapped in slivers of carrot.
Chevre,
olive oil, garlic and sun-dried tomato are spread on this Crostini.
Vegetarian Spring Roll
with cilantro & chili peppers.
Served with a Thai style
dipping sauce & plain soya sauce.
Barbecue salmon Nori roll,
a Japanese wrap with smoked salmon, rice & spring onion,
Served with wasabi and pickled ginger.
Chicken Bombay,
lightly curried chicken, skewered with apple, served with our house
chutney.
Chocolate dipped florentines & fresh fruit.
Presented HOT
Oven baked phyllo
pastry with chicken, brie & roasted shallots.
Gingered Pork WonTons
with a Thai style dipping sauce.
Seafood Croquetas,
Tasty seafood bites are served with our cumin dip.
Self Service
Cheeses & Fresh Fruit,
to include Brie, smoked Gouda, Swiss, herbed Havarti,
Cheddars and a display of seasonal fresh fruit with crackers.
Marinated Salmon,
Tender sleeves of marinated salmon, a dill mustard mayonnaise,
garnished with capers & red onion and served with sliced rye bread.
Hummous
with mini pitas and carrot
& jicama sticks for dipping.
Empanadas,
tasty Spanish tarts with tuna, onion, garlic, peppers & tomato.
Feature Stations
Seafood
One of our Chefs has a
variety of seafood on skewers; Scallops, Shrimp & Calamari
& cooks these up "fondue" style in a cast iron pot. Tasty
sauces will be served for dipping.
Carving
BEEF TENDERLOIN
PEPITOS, a Spanish style
steak sandwich will be carved to order for your guests.
Tenderloin of Beef is peppered and carved onto fresh baguettes and served
with condiments of sliced red onion, gherkins and our special mustard
mayonnaise spread.

featues a combination of our Seafood Fondue & self service
with special table decor featuring river rock by Silver Moon Productions
Inc.
THE
BAR SERVICE
Two full
bars to service the client's 300 guests. The full bar service featured
the service of wine, beer, highballs and featured cocktails; Crantinis
& Caesars.
